Genkotsuya is a Yakiniku Restaurant located in Yokosuka, Japan.

The owner's food is basically Japanese food. Therefore, all dishes are based on the "Japanese" taste. ● Cut, boil, boil, bake, expose, and cook each and every one of them properly. ● Thoroughly manage the ingredients and value the delicious temperature and eating quality of the food. I try to be the most basic of such dishes every day.

Handmade seasonings

The sauce , chili oil , gochujang , lettuce miso , and dressing are all handmade. Although it is by no means conspicuous, "our taste making" is an indispensable element to complete each dish. Both wakame soup and genkotsu soup are made with Japanese ingredients such as dried bonito, kelp, and dried sardines, and are adjusted to a finish that you can drink to the end.

The meat used in Genkotsuya is local Hayama beef , Hama pork , and Shonan pork , and seasonal vegetables are Miura vegetables grown locally as much as possible.

The shopkeeper's hobby is fishing. ( Updated blog every week ) We serve sashimi and boiled fish as a hobby. Even though it is a service, we never cut corners, and we calculate not only the freshness of the fish, but also how to paste the fat and when to eat it so that you can taste the local fish deliciously. * "Sashimi no Tsuma" also uses distilled water, so we would appreciate it if you could eat it to the end.
